A Great Snack For Winter

I love this as a snack in winter and it is a good way to get the Veggie intake in. Add a hot crispy bread roll with a little butter and you cant go wrong.

Pumpkin Soup

  • 1/2 butternut pumpkin
  • 2 carrots
  • 1 sweet potato
  • 3 potatoes
  • 1 onion
  • 2Tsb stock
  • 200ml Cream
  • Salt and Pepper

Method

  1. Place all Vegs in pot and bring to boil. Boil until soft.
  2. Put vegs through bender and bender use water in pot to get the desired thickness.
  3. Return to pot and simmer mix in stock, cream, salt and pepper to taste. Simmer for 10 mins.

A very easy snack to cook on your Sunday arvo and double the mix you have snacks for the whole week.
