I love this as a snack in winter and it is a good way to get the Veggie intake in. Add a hot crispy bread roll with a little butter and you cant go wrong.
- 1/2 butternut pumpkin
- 2 carrots
- 1 sweet potato
- 3 potatoes
- 1 onion
- 2Tsb stock
- 200ml Cream
- Salt and Pepper
- Place all Vegs in pot and bring to boil. Boil until soft.
- Put vegs through bender and bender use water in pot to get the desired thickness.
- Return to pot and simmer mix in stock, cream, salt and pepper to taste. Simmer for 10 mins.
A very easy snack to cook on your Sunday arvo and double the mix you have snacks for the whole week.
